A fig tart is a classic dessert featuring a crisp pastry base filled with a rich almond cream (frangipane) and topped with fresh figs. It’s baked until golden and then often glazed for a glossy, professional finish. This tart balances sweetness, nuttiness, and the unique flavor of figs.
Preheat your oven to 180°C (350°F). Roll out the shortcrust pastry and line a tart tin. Trim the edges and prick the base with a fork. Line with baking paper and fill with baking beans or rice to blind bake. Bake for 10-12 minutes, then remove the paper and beans and bake for another 5 minutes until lightly golden. Let it cool slightly.
In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the ground almonds and vanilla extract to form a smooth filling.
Spread the almond filling evenly over the pre-baked tart crust. Arrange the fig halves or slices on top, pressing them gently into the filling.
Place the tart in the preheated oven and bake for 30-35 minutes, or until the filling is set and golden brown.
Optional: Warm the honey slightly and brush it over the figs for a glossy finish. Let the tart cool before slicing and serving.
