Gordon Ramsay Butter Chicken

Gordon Ramsay’s Butter Chicken is a creamy and mildly spiced Indian curry featuring marinated chicken cooked in a rich tomato and butter-based sauce. It’s known for its velvety texture, bold spices, and balanced sweetness and tanginess.

For the Chicken Marinade:

  • 500g boneless chicken (cut into bite-sized pieces)
  • 150g plain yogurt
  • 1 tbsp lemon juice
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp chili powder
  • ½ tsp salt
  • 1 tbsp oil (for cooking)

For the Butter Chicken Sauce:

  • 2 tbsp butter
  • 1 tbsp oil
  • 1 onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1-inch ginger (grated)
  • 2 tbsp tomato purée
  • 200g canned tomatoes (blended)
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • ½ tsp chili powder
  • ½ tsp sugar
  • 100ml double cream
  • 2 tbsp butter (for finishing)
  • Salt and black pepper (to taste)
  • Fresh coriander (for garnish)

Instructions

Step 1: Marinate the Chicken

  • In a bowl, mix yogurt, lemon juice, turmeric, garam masala, cumin, coriander, chili powder, and salt.
  • Add the chicken pieces and coat well.
  • Cover and marinate in the fridge for at least 1 hour (or overnight for better flavor).

Step 2: Cook the Chicken

  • Heat 1 tbsp oil in a frying pan over medium heat.
  • Add the marinated chicken and cook for 5-6 minutes until golden brown.
  • Remove from the pan and set aside.

Step 3: Prepare the Butter Chicken Sauce

  • In the same pan, melt 2 tbsp butter and add chopped onions. Sauté for 3-4 minutes until soft.
  • Add garlic and ginger, cooking for 1 minute until fragrant.
  • Stir in the tomato purée, blended canned tomatoes, cumin, garam masala, chili powder, and sugar.
  • Simmer for 10 minutes, stirring occasionally.

Step 4: Blend and Finish the Sauce

  • Blend the sauce until smooth using a hand blender or regular blender.
  • Return the sauce to the pan and stir in double cream and 2 tbsp butter.
  • Season with salt and black pepper to taste.

Step 5: Combine Chicken and Sauce

  • Add the cooked chicken to the sauce and simmer for 5 minutes, ensuring the chicken is fully coated.

Step 6: Serve and Garnish

  • Sprinkle with fresh coriander and serve hot with rice, naan, or roti.
