For the Mac and Cheese:

  • 250g elbow macaroni (or any short pasta)
  • 2 tbsp unsalted butter

  • 500ml whole milk
  • 150ml double cream

  • 1 tsp smoked paprika (optional)
  • ½ tsp garlic powder
  • 150g mature cheddar cheese (grated)
  • 75g Gruyère cheese (grated)
  • 50g Parmesan cheese (grated)
  • Salt and black pepper (to taste)

For the Crispy Topping (Optional):

  • 50g panko breadcrumbs
  • 25g Parmesan cheese (grated)
  • 1 tbsp butter (melted)

Instructions

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook the macaroni until al dente according to package instructions.
  • Drain and set aside.

Step 2: Make the Cheese Sauce

  • In a saucepan over medium heat, melt the butter, then stir in the flour to create a roux.
  • Cook for 1 minute, stirring continuously.
  • Gradually whisk in the milk and double cream, ensuring a smooth mixture.
  • Stir in Dijon mustard, smoked paprika, and garlic powder.
  • Simmer for 3-4 minutes, stirring until thickened.

Step 3: Add the Cheese

  • Lower the heat and add the cheddar, Gruyère, and Parmesan.
  • Stir continuously until melted and smooth.
  • Season with salt and black pepper to taste.

Step 4: Combine Pasta and Sauce

  • Add the cooked macaroni to the cheese sauce and stir to coat evenly.

Step 5: Prepare the Crispy Topping (Optional)

  • Mix the panko breadcrumbs, Parmesan cheese, and melted butter in a small bowl.
  • Sprinkle over the mac and cheese.

Step 6: Bake Until Golden (Optional)

  • Preheat the oven to 200°C (180°C fan) or 400°F.
  • Transfer the mac and cheese to a baking dish, sprinkle the topping, and bake for 10 minutes until golden brown.

Step 7: Serve and Enjoy

  • Serve immediately while hot and creamy.
