Oat biscuits are simple cookies made with rolled oats, flour, butter, and sugar, often with a hint of golden syrup for added flavor. Mary Berry’s recipe ensures a crisp, golden biscuit with just the right amount of chewiness.
Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
In a mixing bowl, combine the rolled oats, all-purpose flour, baking powder, and a pinch of salt. Stir well to ensure the baking powder is evenly distributed.
In a separate bowl, beat the softened butter and caster sugar together until light and fluffy. Stir in the golden syrup until fully incorporated.
Gradually add the dry ingredients to the butter mixture. Mix until you have a soft dough.
Scoop small portions of dough (about a tablespoon) and roll them into balls. Place them on the prepared baking tray, leaving space between each ball. Flatten each slightly with the back of a spoon or your fingers.
Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown around the edges.
Remove the tray from the oven and let the biscuits cool on the baking tray for 5 minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
