Mushrooms on toast is a classic dish where sautéed mushrooms are cooked with herbs and seasonings and then piled onto toasted bread. It’s a versatile and satisfying meal that’s easy to prepare and full of flavor.

Ingredients

  • Mushrooms: 250g (2 cups), sliced (button, cremini, or mixed).
  • Olive oil: 2 tablespoons.
  • Garlic: 2 cloves, finely chopped.
  • Fresh thyme: A few sprigs, leaves picked.
  • Lemon juice: 1 tablespoon.
  • Salt and black pepper: To taste.
  • Bread: 4 slices (sourdough or rustic bread works best).
  • Butter: 1 tablespoon (optional, for extra richness).
  • Parmesan or goat cheese: For garnish (optional).
  • Fresh parsley: Chopped, for garnish (optional).

Instructions

Step 1: Toast the bread

Toast the bread slices in a toaster or grill them in a pan until golden and crispy. Set aside.

Step 2: Sauté the mushrooms

Heat the olive oil in a large frying pan over medium heat. Add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until golden and softened.

Step 3: Add garlic and thyme

Stir in the chopped garlic and fresh thyme leaves. Cook for another 1-2 minutes until fragrant.

Step 4: Add seasoning and lemon juice

Season the mushrooms with salt and black pepper. Add a squeeze of lemon juice to brighten the flavors and stir well. For extra richness, stir in a knob of butter, if desired.

Step 5: Assemble the dish

Place the toasted bread slices on plates. Spoon the sautéed mushrooms generously over the toast.

Step 6: Garnish and serve

Garnish with grated Parmesan, crumbled goat cheese, or chopped parsley, if desired. Serve warm.
