Jamie Oliver’s Simple Courgette Pasta is a vibrant dish made with fresh courgettes (zucchini), pasta, and a touch of creamy sauce. It’s light yet flavorful, with a balance of freshness and indulgence.

Ingredients

  • Pasta: 300g, such as spaghetti or linguine.
  • Courgettes (zucchini): 2 large, grated or finely sliced.
  • Garlic: 2 cloves, minced.
  • Olive oil: 2 tablespoons for sautéing.
  • Cream (optional): 100ml for added richness.
  • Parmesan cheese: 50g, grated.
  • Salt and pepper: To taste.
  • Fresh basil: A handful for garnish.

Instructions

Step 1: Cook the pasta
Boil water in a large pot, add a pinch of salt, and cook pasta according to package instructions. Drain and set aside, reserving ½ cup of pasta water.

Step 2: Prepare the courgettes
Heat olive oil in a frying pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add grated courgettes and cook for 5-7 minutes, stirring occasionally, until softened.

Step 3: Combine pasta and courgettes
Toss the cooked pasta into the pan with courgettes. Stir to combine. Add reserved pasta water to loosen the mixture.

Step 4: Add cream and parmesan
Pour in cream (if using) and sprinkle grated parmesan. Stir well until the sauce coats the pasta evenly.

Step 5: Season and garnish
Add salt, pepper, and fresh basil leaves. Toss once more and serve immediately.
