  1. Preheat the Oven: Preheat your oven to 180°C (160°C fan) or 350°F.
  2. Cook the Vegetables: Heat the olive oil in an oven-safe frying pan over medium heat. Add the sliced red onion and cook for 3-4 minutes until softened. Stir in the cherry tomatoes and spinach, cooking for another 2-3 minutes until the spinach wilts slightly.
