Ingredients

  • White fish fillets: 4, such as cod, haddock, or tilapia.
  • Cherry tomatoes: 500g, halved.
  • Garlic: 4 cloves, finely sliced.
  • Fresh basil: A handful, leaves torn.
  • Olive oil: 3 tablespoons.

Instructions

Step 1: Prepare the ingredients

Halve the cherry tomatoes and slice the garlic. Pat the fish fillets dry and season lightly with salt and pepper.

Step 2: Cook the garlic

Heat the olive oil in a large skillet over medium heat. Add the sliced garlic and cook gently for 1-2 minutes until fragrant but not browned.

Step 3: Add the tomatoes

Stir in the cherry tomatoes and cook for 5-7 minutes, stirring occasionally, until they soften and release their juices.

Step 4: Add the fish
