Shred the cabbage finely and place it in a large mixing bowl. Grate the carrots, thinly slice the red onion, and add them to the bowl. Core the apples and cut them into thin matchsticks or grate them. Add the apples to the bowl along with the chopped parsley.
In a small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, Dijon mustard, honey (if using), salt, and black pepper until smooth and well combined.
