Apple coleslaw is a fresh take on the traditional coleslaw, featuring the sweetness of apples paired with crunchy vegetables and a creamy dressing. It’s a versatile dish that can be served with grilled meats, and burgers, or enjoyed on its own.

Ingredients

  • Apples: 2 large, preferably crisp varieties like Granny Smith or Honeycrisp.
  • Cabbage: ½ small head, shredded.
  • Carrots: 2 medium, grated.
  • Red onion: 1 small, thinly sliced.
  • Fresh parsley: A handful, chopped.

For the Dressing:

  • Mayonnaise: 4 tablespoons.
  • Greek yogurt: 2 tablespoons.
  • Apple cider vinegar: 1 tablespoon.
  • Dijon mustard: 1 teaspoon.
  • Honey: 1 teaspoon (optional, for added sweetness).
  • Salt and black pepper: To taste.

Instructions

Step 1: Prepare the vegetables and apples

Shred the cabbage finely and place it in a large mixing bowl. Grate the carrots, thinly slice the red onion, and add them to the bowl. Core the apples and cut them into thin matchsticks or grate them. Add the apples to the bowl along with the chopped parsley.

Step 2: Make the dressing

In a small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, Dijon mustard, honey (if using), salt, and black pepper until smooth and well combined.

Step 3: Combine the coleslaw

Pour the dressing over the shredded vegetables and apples. Toss everything together until evenly coated.

Step 4: Chill and serve

Refrigerate the coleslaw for at least 15 minutes before serving to allow the flavors to meld. Serve chilled as a side dish.
