Bobotie is a traditional South African dish made with minced meat seasoned with spices, dried fruit, and a blend of curry flavors, topped with a golden egg custard. It’s a rich, savory, and slightly sweet dish that is often served with yellow rice and chutney.

Ingredients

  • Minced beef or lamb: 500g.
  • Onion: 1 large, finely chopped.
  • Garlic: 2 cloves, minced.
  • Curry powder: 2 teaspoons.
  • Turmeric: 1 teaspoon.
  • Dried fruit: 50g (raisins or apricots, chopped).
  • White bread: 2 slices, soaked in ½ cup milk.
  • Chutney: 2 tablespoons (mango chutney works well).
  • Vinegar: 1 tablespoon (white or apple cider vinegar).
  • Eggs: 2 large.
  • Bay leaves: 2.
  • Salt and pepper: To taste.
  • Olive oil: 2 tablespoons for frying.

Instructions

Step 1: Prepare the filling
Preheat your oven to 180°C (350°F). Heat olive oil in a large frying pan over medium heat. Add the chopped onion and garlic, sautéing until softened. Stir in the curry powder and turmeric, cooking for 1 minute until fragrant.

Step 2: Cook the meat
Add the minced beef or lamb to the pan. Cook until browned, breaking it up with a spoon. Season with salt and pepper.

Step 3: Add flavorings
Stir in the soaked bread (squeezed to remove excess milk), dried fruit, chutney, and vinegar. Mix well and cook for another 2-3 minutes.

Step 4: Assemble the Bobotie
Transfer the meat mixture to a greased baking dish. Press it down evenly and insert the bay leaves into the mixture.

Step 5: Make the custard topping
In a bowl, whisk together the eggs and remaining milk from the soaked bread. Season lightly with salt and pepper. Pour the custard over the meat mixture.

Step 6: Bake the Bobotie
Bake in the preheated oven for 30-35 minutes, or until the custard is set and lightly golden on top.

Step 7: Serve and enjoy
Remove from the oven and let it rest for 5 minutes. Serve warm with yellow rice and mango chutney.
