  • 200g (7 oz) chorizo (sliced or diced)
  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 2 medium sweet potatoes (peeled and diced)

  • ½ tsp ground cumin
  • 1 liter (4 cups) vegetable or chicken stock
  • 1 can (400g) chopped tomatoes
  • 1 red bell pepper (chopped)
  • 1 tbsp tomato paste
  • Salt and black pepper (to taste)

For Garnish (Optional):

  • Fresh coriander or parsley (chopped)
  • A drizzle of olive oil or cream
  • Crusty bread for serving

Instructions

Step 1: Cook the Chorizo

  • Heat olive oil in a large pot over medium heat.
  • Add chorizo slices and cook for 3-4 minutes, stirring until the oil turns slightly red and the chorizo is crispy.
  • Remove some crispy chorizo for garnishing later.

Step 2: Sauté the Aromatics

  • In the same pot, add onion, garlic, and red bell pepper.
  • Sauté for 3-5 minutes until softened.

Step 3: Add Spices and Sweet Potatoes

  • Stir in smoked paprika, ground cumin, and tomato paste.
  • Add the sweet potatoes and mix well to coat them in the flavors.

Step 4: Simmer the Soup

  • Pour in the chopped tomatoes and stock.
  • Season with salt and black pepper.
  • Bring to a gentle boil, then reduce heat and simmer for 20 minutes until sweet potatoes are tender.

Step 5: Blend for a Smooth Texture

  • Use an immersion blender to blend the soup until smooth.
  • For a chunkier soup, blend only half the mixture.

Step 6: Serve and Enjoy

  • Ladle the soup into bowls.
  • Top with reserved crispy chorizo, fresh coriander, and a drizzle of olive oil or cream.
  • Serve hot with crusty bread.
