Jamie Oliver’s Croissant Bread and Butter Pudding is a twist on the classic British dessert. It uses buttery croissants instead of bread, soaked in a creamy custard infused with vanilla and cinnamon. Baked until golden and crispy on top, it’s a dessert that’s both elegant and easy to make.

 

Ingredients

  • 46 stale croissants, torn into chunks
  • 500ml whole milk
  • 250ml double cream
  • 4 large eggs
  • 100g caster sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 50g butter, softened (for greasing)
  • Optional: 50g raisins, chocolate chips, or fresh berries

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 180°C (350°F). Grease the baking dish with softened butter.

Step 2: Prepare the Croissants

  • Tear the croissants into bite-sized chunks and place them in the greased baking dish. Scatter raisins, chocolate chips, or berries (if using) evenly over the croissants.

Step 3: Make the Custard

  • In a mixing bowl, whisk together the milk, cream, eggs, caster sugar, vanilla extract, and ground cinnamon until smooth and well combined.

Step 4: Soak the Croissants

  • Pour the custard mixture evenly over the croissant chunks, pressing them down gently to ensure they soak up the liquid. Let it sit for 10-15 minutes to absorb.

Step 5: Bake the Pudding

  • Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden and crispy, and the custard is set but still slightly wobbly in the center.

Step 6: Serve

  • Remove from the oven and let it cool slightly. Serve warm with a dusting of powdered sugar, a drizzle of cream, or a scoop of vanilla ice cream.
