Dan Dan Noodles is a classic Sichuan dish made with wheat noodles, a spicy sesame-peanut sauce, and minced pork or chicken. Infused with garlic, chili oil, and soy sauce, it’s a flavorful, spicy, and slightly nutty dish that’s both comforting and invigorating.

Ingredients

  • Noodles: 300g (wheat noodles or egg noodles).
  • Minced pork or chicken: 200g.
  • Garlic: 3 cloves, finely chopped.
  • Ginger: 1-inch piece, finely grated.
  • Spring onions: 2, finely sliced (plus extra for garnish).
  • Soy sauce: 3 tablespoons.
  • Chili oil: 2 tablespoons (adjust to taste).
  • Sesame paste or peanut butter: 2 tablespoons.
  • Black vinegar: 1 tablespoon (or substitute rice vinegar).
  • Sugar: 1 teaspoon.
  • Sichuan peppercorns: 1 teaspoon, toasted and crushed (optional).
  • Chicken stock: ½ cup.
  • Sesame seeds: 1 tablespoon for garnish (optional).
  • Vegetable oil: 1 tablespoon for frying.

Instructions

Step 1: Cook the noodles
Boil water in a large pot, add the noodles, and cook according to package instructions. Drain and set aside, tossing with a little oil to prevent sticking.

Step 2: Prepare the sauce base
In a small bowl, whisk together soy sauce, chili oil, sesame paste or peanut butter, black vinegar, sugar, and chicken stock. Mix until smooth and set aside.

Step 3: Cook the meat
Heat vegetable oil in a skillet or wok over medium heat. Add the minced pork or chicken, garlic, and ginger. Cook for 5-7 minutes, breaking up the meat, until browned and cooked through.

Step 4: Combine sauce and meat
Pour the prepared sauce into the skillet with the meat. Stir well and let it simmer for 2-3 minutes to combine the flavors.

Step 5: Toss noodles in sauce
Add the cooked noodles to the skillet and toss thoroughly to coat them in the sauce. Adjust seasoning with additional soy sauce or chili oil if needed.

Step 6: Garnish and serve
Serve the noodles hot, topped with sliced spring onions, toasted Sichuan peppercorns, and sesame seeds for garnish.
