Gordon Ramsay’s Butter Poached Lobster is a slow-cooked seafood dish where lobster tails or whole lobster meat are gently poached in a butter-infused broth. This cooking method keeps the lobster moist, flavorful, and incredibly tender, making it a fine-dining favorite.

For the Lobster:

  • 2 lobster tails (or 1 whole lobster, shelled)
  • 250g unsalted butter (cut into small cubes)
  • 2 tbsp water
  • 1 tsp lemon juice
  • 1 garlic clove (minced)
  • 1 sprig of fresh thyme
  • 1 sprig of fresh tarragon (optional)
  • Salt and black pepper (to taste)

For Serving (Optional):

  • Fresh parsley (chopped)
  • Lemon wedges
  • Crusty bread or pasta

Instructions

Step 1: Prepare the Lobster

  • If using whole lobsters, blanch them in boiling water for 1-2 minutes, then remove the meat from the shell.
  • If using lobster tails, cut through the shell lengthwise and remove the meat while keeping it intact.

Step 2: Make the Butter Poaching Liquid

  • In a saucepan over low heat, add 2 tbsp water and lemon juice.
  • Slowly whisk in the cubed butter, one piece at a time, until fully melted and emulsified.
  • Keep the heat below simmering (60-65°C / 140-150°F) to prevent the butter from separating.
  • Stir in garlic, thyme, and tarragon, then season with salt and black pepper.

Step 3: Poach the Lobster

  • Add the lobster meat to the butter bath, ensuring it is fully submerged.
  • Poach gently for 5-7 minutes, turning occasionally, until the lobster is opaque and tender.

Step 4: Serve Immediately

  • Remove the lobster using a slotted spoon, allowing excess butter to drain.
  • Garnish with chopped parsley and lemon wedges.
  • Serve with crusty bread, pasta, or over a fresh salad.
