Gordon Ramsay’s Chicken and Rice is a simple yet elegant dish that consists of pan-seared chicken, aromatic rice, and a combination of herbs and spices. This dish is inspired by various global cuisines, incorporating bold flavors and a perfectly cooked texture.

For the Chicken:

  • 4 bone-in, skin-on chicken thighs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter

For the Rice:

  • 1 cup basmati or jasmine rice (rinsed)
  • 2 cups chicken stock
  • 1 small onion (finely chopped)
  • 2 garlic cloves (minced)
  • ½ tsp cumin
  • ½ tsp turmeric
  • ½ tsp dried thyme
  • ½ tsp chili flakes (optional)
  • 1 bay leaf
  • 1 tbsp lemon juice

For Garnish:

  • 2 tbsp fresh parsley (chopped)
  • Lemon wedges

Instructions

  • Step 1: Season the chicken.
    Pat the chicken thighs dry and season them with salt, black pepper, and smoked paprika.
  • Step 2: Sear the chicken.
    Heat olive oil and butter in a large skillet over medium-high heat. Place the chicken thighs skin-side down and cook for 5-7 minutes until golden brown. Flip and cook for another 3 minutes, then remove from the pan and set aside.
  • Step 3: Sauté the aromatics.
    In the same pan, add chopped onion and cook until soft. Stir in the minced garlic, cumin, turmeric, thyme, and chili flakes. Cook for 1-2 minutes until fragrant.
  • Step 4: Cook the rice.
    Add the rinsed rice and bay leaf to the pan, stirring to coat in the spices. Pour in the chicken stock and lemon juice, and bring to a gentle simmer.
  • Step 5: Return the chicken and simmer.
    Nestle the seared chicken thighs back into the pan, skin-side up. Cover and cook on low heat for 20-25 minutes, or until the rice is fully cooked and the chicken is tender.
  • Step 6: Rest and serve.
    Remove the pan from heat and let it sit covered for 5 minutes. Garnish with fresh parsley and serve with lemon wedges.
