Gordon Ramsay’s Chili Jam is a rich, sticky, and spicy-sweet preserve made with fresh chilies, red peppers, garlic, and vinegar. It delivers a perfect balance of heat and tanginess, making it a versatile condiment for dipping, glazing, or spreading.

  • 6 red chilies (deseeded and finely chopped)
  • 2 red bell peppers (chopped)
  • 2 garlic cloves (minced)
  • 1-inch ginger (grated)
  • 200g granulated sugar
  • 100ml apple cider vinegar
  • 1 tbsp fish sauce (optional, for umami)
  • 1 tsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp salt

Instructions

  • Step 1: Blend the ingredients.
    In a blender or food processor, combine the red chilies, red bell peppers, garlic, and ginger. Blend until you get a coarse paste.
  • Step 2: Cook the mixture.
    Transfer the blended mixture to a saucepan over medium heat. Add sugar, apple cider vinegar, fish sauce (if using), soy sauce, lime juice, and salt. Stir well to combine.
  • Step 3: Simmer the jam.
    Bring the mixture to a boil, then reduce to a low simmer. Let it cook for 20-25 minutes, stirring occasionally, until it thickens into a jam-like consistency.
  • Step 4: Test the consistency.
    Spoon a small amount onto a plate and let it cool. If it holds its shape and has a sticky texture, it’s ready. If it’s too runny, simmer for a few more minutes.
  • Step 5: Jar and store.
    Remove from heat and let the jam cool slightly. Transfer it into sterilized glass jars, seal it tightly, and allow it to cool completely before refrigerating.
