Gordon Ramsay’s Lamb Stew is a slow-cooked dish made with lamb shoulder or leg, vegetables, red wine, and fresh herbs, creating a deep, savory gravy. The slow cooking process ensures the lamb becomes tender and fall-apart soft, making it a comforting and satisfying meal.

For the Lamb Stew:

  • 2 tbsp olive oil
  • 900g (2 lbs) lamb shoulder (cut into chunks)
  • 2 tbsp plain flour
  • 1 onion (finely chopped)
  • 2 carrots (sliced)
  • 2 celery stalks (chopped)
  • 2 cloves garlic (minced)
  • 1 tbsp tomato purée
  • 250ml (1 cup) red wine (optional, or use extra stock)
  • 500ml (2 cups) lamb or beef stock
  • 2 sprigs fresh rosemary
  • 1 bay leaf
  • 1 tsp Worcestershire sauce
  • Salt and black pepper (to taste)

For Serving (Optional):

  • Mashed potatoes or crusty bread
  • Fresh parsley (chopped)

Instructions

Step 1: Brown the Lamb

  • Heat 1 tbsp olive oil in a casserole dish over medium heat.
  • Toss the lamb chunks in flour, then shake off excess.
  • Sear the lamb in batches for 4-5 minutes per side until golden brown.
  • Remove from the pot and set aside.

Step 2: Sauté the Vegetables

  • Add another tablespoon of olive oil to the pot.
  • Sauté the onion, carrots, and celery for 5 minutes until softened.
  • Stir in the garlic and cook for another 1 minute.

Step 3: Build the Flavor

  • Stir in the tomato purée and cook for 1 minute.
  • Pour in the red wine (if using) and let it simmer for 3-4 minutes to reduce slightly.

Step 4: Simmer the Stew

  • Return the browned lamb to the pot.
  • Add lamb stock, Worcestershire sauce, rosemary, and bay leaf.
  • Bring to a simmer, then cover and cook on low heat for 1½ to 2 hours, stirring occasionally.

Step 5: Check the Consistency

  • Remove the lid for the last 30 minutes to let the gravy thicken.
  • Season with salt and black pepper to taste.

Step 6: Serve and Enjoy

 

  • Remove the bay leaf and rosemary sprigs before serving.
  • Garnish with fresh parsley and serve with mashed potatoes, crusty bread, or roasted vegetables.
