Hairy Bikers Anglesey Eggs

Anglesey Eggs is a traditional Welsh recipe made with boiled eggs nestled in creamy mashed potatoes and topped with a rich cheese sauce. The dish is baked to golden perfection, making it a comforting and flavorful classic.

  • 4 large eggs, boiled and peeled
  • 500g potatoes, peeled and chopped
  • 2 leeks, finely sliced
  • 50g butter
  • 100ml milk
  • Salt and black pepper, to taste
  • 50g grated cheddar cheese, for topping

For the Cheese Sauce:

  • 30g butter
  • 30g plain flour
  • 300ml milk
  • 75g grated cheddar cheese
  • 1 tsp mustard (optional)
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Potatoes: Boil the potatoes in salted water until tender. Drain and mash with butter, milk, salt, and pepper until smooth.
  2. Cook the Leeks: In a frying pan, melt a knob of butter over medium heat. Add the sliced leeks and sauté for 5-7 minutes until soft. Mix the cooked leeks into the mashed potatoes.
  3. Make the Cheese Sauce: In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute to form a roux. Gradually add the milk, whisking constantly to avoid lumps. Cook until the sauce thickens, then stir in the grated cheese, mustard (if using), and seasoning.
  4. Assemble the Dish: Preheat the oven to 200°C (400°F). Spread the leek and potato mixture in a baking dish. Halve the boiled eggs and nestle them into the potato mixture, yolk side up. Pour the cheese sauce evenly over the eggs and potatoes.
  5. Add Cheese and Bake: Sprinkle grated cheddar cheese on top and bake in the preheated oven for 15-20 minutes, or until golden and bubbling.
  6. Serve and Enjoy: Remove from the oven and let cool slightly. Serve hot as a main dish or side dish.
