  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • Juice and zest of 1 lemon
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • Optional: Fresh parsley or coriander, chopped, for garnish

Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together the olive oil, garlic, lemon juice and zest, smoked paprika, dried oregano, salt, and pepper until well combined.
  2. Marinate the Chicken: Place the chicken breasts in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  3. Preheat the Grill: Preheat your outdoor grill or stovetop grilling pan to medium-high heat. Lightly oil the grates or pan to prevent sticking.
  4. Grill the Chicken: Remove the chicken from the marinade and place it on the hot grill. Cook for 6-8 minutes per side, depending on the thickness of the chicken breasts, until they are fully cooked and have a nice char. The internal temperature should reach 75°C (165°F).
  5. Rest the Chicken: Remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute.
  6. Serve and Garnish: Slice or serve whole, garnished with fresh parsley or coriander if desired.
