Ingredients

  • Cherry tomatoes: 250g, whole or halved

  • Zucchini (courgette): 1 large, sliced into rounds
  • Red onion: 1, cut into wedges
  • Garlic cloves: 3, minced
  • Olive oil: 3 tablespoons
  • Dried oregano: 1 teaspoon
  • Paprika: ½ teaspoon
  • Salt and pepper: To taste
  • Fresh parsley or basil: Chopped, for garnish

Instructions

Prepare the Vegetables:

  • Chop the vegetables: Slice the zucchini, red pepper, and onion into evenly sized pieces. Leave the cherry tomatoes whole or halve them.
