Hairy Bikers Treacle Tart

Treacle Tart is a quintessential British dessert made with a shortcrust pastry base filled with a mixture of golden syrup, breadcrumbs, and lemon juice. Popularized by its traditional roots and iconic mentions in British literature, this dessert is a sweet and tangy treat.

For the Pastry:

    • 200g plain flour

    • 100g unsalted butter, chilled and diced

    • 2 tbsp icing sugar

    • 1 egg yolk

    • 23 tbsp cold water

For the Filling:

    • 400g golden syrup

    • 150g fresh white breadcrumbs

    • Juice and zest of 1 lemon

    • 1 tbsp heavy cream (optional)

Instructions

  1. Make the Pastry: In a bowl, combine the flour and icing sugar. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs. Add the egg yolk and a tablespoon of cold water. Mix until the dough comes together, adding a little more water if needed. Wrap the pastry in cling film and chill in the refrigerator for 30 minutes.
  2. Prepare the Tart Base: Roll out the pastry on a floured surface to fit your tart tin. Line the tin with the pastry and trim the edges. Prick the base with a fork and line it with baking parchment. Fill with baking beans or rice and blind bake in a preheated oven at 190°C (375°F) for 12-15 minutes. Remove the beans and parchment, and bake for another 5 minutes until the base is lightly golden.
  3. Make the Filling: In a saucepan, gently heat the golden syrup until warm but not boiling. Remove from the heat and stir in the breadcrumbs, lemon juice, and zest. Mix well, ensuring the breadcrumbs are evenly coated.
  4. Assemble and Bake: Pour the filling into the pre-baked tart shell, spreading it out evenly. Bake in the oven at 190°C (375°F) for 25-30 minutes until the filling is golden and set.
  5. Serve: Allow the tart to cool slightly before serving. Serve warm or at room temperature with cream, custard, or a scoop of vanilla ice cream.
