This dish uses just five basic ingredients to create a tender, golden chicken infused with the brightness of fresh lemon. It’s a simple, one-pan recipe that’s packed with flavor, making it ideal for quick meals or when you need an impressive dish with minimal effort.

  • 4 skin-on, bone-in chicken thighs
  • 2 lemons, zest and juice
  • 2 sprigs fresh rosemary
  • 1 bulb garlic, cloves separated but unpeeled
  • 2 tbsp olive oil

Instructions

  1. Preheat the Oven: Preheat your oven to 200°C (180°C fan) or 400°F.
  2. Sear the Chicken: Heat the olive oil in an oven-safe frying pan over medium-high heat. Season the chicken thighs with salt and pepper. Place them skin-side down in the hot pan and sear for 4-5 minutes until the skin is golden and crispy. Turn the chicken and sear for 1-2 minutes on the other side.
  3. Add the Flavorings: Scatter the unpeeled garlic cloves and fresh rosemary sprigs around the chicken. Zest one lemon over the chicken and squeeze its juice into the pan. Slice the second lemon into rounds and add them to the pan as well.
  4. Roast the Chicken: Transfer the pan to the preheated oven and roast for 15-20 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature should reach 75°C (165°F).
  5. Serve and Enjoy: Remove the pan from the oven and let the chicken rest for a few minutes. Serve the chicken thighs with the roasted garlic and lemon slices, spooning any juices over the top for extra flavor.
