Jamie Oliver Mixed Veg Pasta

Mixed Veg Pasta is a versatile dish featuring pasta combined with a medley of sautéed vegetables in a savory tomato sauce. Jamie Oliver’s approach highlights fresh ingredients and a simple cooking method for a wholesome, satisfying meal.

  • 400g dried pasta (penne, fusilli, or spaghetti)
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 zucchini (courgette), sliced
  • 150g mushrooms, sliced
  • 400g canned chopped tomatoes
  • 1 tbsp tomato purée
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves, for garnish
  • 50g grated Parmesan or vegetarian hard cheese, for topping

Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving 100ml of pasta water.
  2. Sauté the Vegetables:
    • Heat olive oil in a large frying pan over medium heat. Add the chopped onion and sauté for 5 minutes until softened. Stir in the minced garlic and cook for 1 minute.
  3. Add the Vegetables:
    • Add the red bell pepper, zucchini, and mushrooms to the pan. Cook for 8-10 minutes, stirring occasionally, until the vegetables are tender.
  4. Make the Sauce:
    • Stir in the canned chopped tomatoes, tomato purée, and dried oregano. Season with salt and black pepper to taste. Simmer for 10 minutes, allowing the flavors to combine.
  5. Combine Pasta and Sauce:
    • Add the cooked pasta to the vegetable sauce. Toss well to coat, adding a splash of reserved pasta water if the sauce is too thick.
  6. Serve and Garnish:
    • Divide the pasta among serving plates. Top with grated Parmesan or vegetarian cheese and garnish with fresh basil leaves.
