  • 3 tbsp honey
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar or apple cider vinegar
  • ½ tsp sesame oil
  • ½ tsp chili flakes (optional for heat)
  • 1 tsp sesame seeds (plus extra for garnish)

For Serving:

  • Steamed jasmine or brown rice
  • Stir-fried vegetables (broccoli, bell peppers, snap peas)
  • Fresh spring onions, sliced

Instructions

Step 1: Prepare the Chicken

  1. Coat the chicken – In a mixing bowl, toss the diced chicken with cornflour, salt, and black pepper to create a light coating.
  2. Heat the oil – In a large frying pan or wok, heat the olive oil over medium-high heat.

Step 2: Cook the Chicken

  1. Sear the chicken – Add the coated chicken to the pan and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Remove from heat and set aside.

Step 3: Make the Sauce
