For the Chicken:

  • 2 tbsp olive oil or coconut oil
  • 2 skinless chicken breasts, diced
  • 2 tbsp cornflour (or whole wheat flour for a healthier option)
  • ½ tsp salt
  • ½ tsp black pepper

For the Honey Sesame Sauce:

  • 3 tbsp honey
  • 2 tbsp low-sodium soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • ½ tsp grated fresh ginger
  • ½ tsp red chili flakes (optional, for heat)
  • 1 tsp sesame seeds (plus extra for garnish)

For Serving:

  • Steamed jasmine or brown rice
  • Steamed broccoli or stir-fried vegetables
  • Fresh spring onions, sliced

Instructions

Step 1: Prepare the Chicken

  1. Coat the chicken – In a mixing bowl, toss the diced chicken with cornflour, salt, and black pepper to create a light coating.
  2. Heat the oil – In a large frying pan or wok, heat the olive oil over medium-high heat.

Step 2: Cook the Chicken

  1. Sear the chicken – Add the coated chicken to the pan and cook for 6-8 minutes, stirring occasionally, until it is golden brown and cooked through. Remove from heat and set aside.

Step 3: Make the Sauce

  1. Combine ingredients – In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, garlic, ginger, and red chili flakes (if using).
  2. Simmer the sauce – Pour the sauce into the pan and let it simmer for 2-3 minutes until slightly thickened.

Step 4: Coat the Chicken and Serve

  1. Combine chicken with sauce – Add the cooked chicken back into the pan and toss until fully coated. Sprinkle with sesame seeds.
  2. Plate and garnish – Serve over rice with steamed vegetables, and garnish with extra sesame seeds and spring onions.
