  • 100g caster sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 175g self-raising flour
  • 30g cocoa powder
  • ½ tsp baking powder
  • ½ tsp salt
  • 200g chocolate chips (dark and milk mixed)

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 180°C (160°C fan) or 350°F.
  • Line two baking trays with parchment paper.

Step 2: Cream the Butter and Sugars

  • In a mixing bowl, beat the softened butter, light brown sugar, and caster sugar together until light and fluffy.

Step 3: Add the Wet Ingredients

  • Mix in the egg and vanilla extract, beating until fully incorporated.

Step 4: Combine the Dry Ingredients

  • Sift together the self-raising flour, cocoa powder, baking powder, and salt in a separate bowl.
  • Gradually fold the dry ingredients into the butter mixture until well combined.

Step 5: Add the Chocolate Chips

  • Stir in the chocolate chips, ensuring they are evenly distributed throughout the dough.

Step 6: Shape the Cookies

  • Scoop out small portions of dough (about 1½ tbsp each) and place them on the prepared baking trays, leaving space between each for spreading.

Step 7: Bake the Cookies

  • Bake for 10-12 minutes, or until the edges are firm but the centers remain slightly soft.

Step 8: Cool and Serve

  • Allow the cookies to cool on the baking trays for 5 minutes, then transfer them to a wire rack to cool completely.
