Peanut butter cookies are a simple and delicious treat made with creamy peanut butter, sugar, and flour. Mary Berry’s version uses classic ingredients to create cookies with a tender center and a lightly crisp edge.
Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
In a large mixing bowl, cream the softened butter, peanut butter, caster sugar, and brown sugar together until light and fluffy.
Beat in the egg until well combined.
In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until a dough forms. If adding chocolate chips or nuts, fold them in now.
Scoop tablespoon-sized portions of dough and roll them into balls. Place the balls on the prepared baking tray, spacing them about 2 inches apart. Flatten each ball slightly with a fork to create a crisscross pattern.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly undercooked but will firm up as they cool.
Allow the cookies to cool on the baking tray for 5 minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
