Ingredients

  • Peanut butter: 175g (¾ cup), smooth or crunchy.
  • Butter: 100g (½ cup), softened.
  • Caster sugar: 100g (½ cup).
  • Brown sugar: 75g (⅓ cup), packed.
  • Egg: 1 large.
  • All-purpose flour: 225g (2 cups).
  • Baking powder: 1 teaspoon.
  • Salt: A pinch.
  • Optional: Chocolate chips or chopped nuts for mix-ins.

Instructions

Step 1: Preheat the oven

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2: Cream butter and sugars

In a large mixing bowl, cream the softened butter, peanut butter, caster sugar, and brown sugar together until light and fluffy.

Step 3: Add egg and mix

Beat in the egg until well combined.

Step 4: Combine dry ingredients

In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until a dough forms. If adding chocolate chips or nuts, fold them in now.

Step 5: Shape the cookies

Scoop tablespoon-sized portions of dough and roll them into balls. Place the balls on the prepared baking tray, spacing them about 2 inches apart. Flatten each ball slightly with a fork to create a crisscross pattern.

Step 6: Bake the cookies

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly undercooked but will firm up as they cool.

Step 7: Cool and serve

Allow the cookies to cool on the baking tray for 5 minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
