Mary Berry’s Vegetarian Quiche is a classic baked dish consisting of a flaky shortcrust pastry base filled with a savory custard of eggs, cream, cheese, and vegetables. This versatile quiche can be customized with different vegetables, herbs, and cheeses, making it a perfect meat-free meal.

For the Shortcrust Pastry:

  • 225g (1¾ cups) plain flour
  • 100g (½ cup) cold unsalted butter (cubed)
  • 1 egg yolk
  • 23 tbsp cold water
  • A pinch of salt

For the Quiche Filling:

  • 3 large eggs
  • 200ml (¾ cup) double cream
  • 100ml (⅓ cup) milk
  • 1 tsp Dijon mustard
  • 1 onion (finely chopped)
  • 1 red bell pepper (chopped)
  • 100g (1 cup) mushrooms (sliced)
  • 100g (1 cup) baby spinach (chopped)
  • 150g (1½ cups) grated cheese (cheddar, Gruyère, or feta)
  • 1 tbsp olive oil
  • Salt and black pepper (to taste)

Instructions

Step 1: Prepare the Pastry

  • In a bowl, rub the cold butter into the flour until the mixture resembles breadcrumbs.
  • Add the egg yolk and cold water, mixing until a dough forms.
  • Wrap in cling film and chill for 30 minutes.

Step 2: Blind Bake the Pastry

  • Preheat oven to 200°C (180°C fan) or 400°F.
  • Roll out the pastry on a floured surface and line the tart tin.
  • Prick the base with a fork, line with baking parchment, and fill with baking beans.
  • Bake for 15 minutes, remove the beans, and bake for another 5 minutes until golden.

Step 3: Prepare the Filling

  • Heat olive oil in a pan and sauté onion, mushrooms, and bell pepper for 5 minutes until softened.
  • Add spinach, season with salt and black pepper, and cook for 1-2 minutes until wilted.
  • In a bowl, whisk together eggs, double cream, milk, Dijon mustard, and half the cheese.

Step 4: Assemble the Quiche

  • Spread the vegetable mixture evenly over the baked pastry case.
  • Pour over the egg and cream mixture.
  • Sprinkle the remaining cheese on top.

Step 5: Bake Until Set

  • Reduce oven temperature to 180°C (160°C fan) or 350°F.
  • Bake for 25-30 minutes until the quiche is golden and set in the middle.

Step 6: Cool and Serve

  • Let the quiche rest for 10 minutes before slicing.
  • Serve warm or at room temperature.
