Jamie Oliver Minty Courgette Tart

Jamie Oliver’s Minty Courgette Tart combines layers of thinly sliced courgettes with fresh mint, creamy cheese, and a flaky pastry base. It’s a vibrant and summery dish that’s quick to make and full of garden-fresh flavors.

Ingredients

  • Puff pastry: 1 pre-made sheet (or homemade).
  • Courgettes: 2 medium, thinly sliced.
  • Ricotta cheese: 200g.
  • Fresh mint leaves: A handful, finely chopped.
  • Parmesan cheese: 50g, grated.
  • Olive oil: 2 tablespoons.
  • Lemon zest: 1 teaspoon.
  • Salt and pepper: To taste.

Instructions

Step 1: Prepare the pastry base

Preheat your oven to 200°C (400°F). Roll out the puff pastry and place it on a baking tray or into a tart tin. Lightly score a 1-inch border around the edges and prick the base with a fork to prevent puffing. Bake for 10 minutes until lightly golden.

Step 2: Prepare the filling

In a small bowl, mix the ricotta cheese with grated Parmesan, lemon zest, and half of the chopped mint. Season with salt and pepper to taste.

Step 3: Assemble the tart

Spread the ricotta mixture evenly over the pre-baked pastry base, staying within the scored border. Arrange the courgette slices on top in overlapping layers or a spiral pattern. Drizzle with olive oil and season with salt and pepper.

Step 4: Bake the tart

Return the tart to the oven and bake for 15-20 minutes, or until the courgettes are tender and lightly golden. Remove from the oven and sprinkle with the remaining mint.

Step 5: Serve and enjoy

Let the tart cool slightly before slicing. Serve warm or at room temperature.
