Jamie Oliver’s Minty Courgette Tart combines layers of thinly sliced courgettes with fresh mint, creamy cheese, and a flaky pastry base. It’s a vibrant and summery dish that’s quick to make and full of garden-fresh flavors.
Preheat your oven to 200°C (400°F). Roll out the puff pastry and place it on a baking tray or into a tart tin. Lightly score a 1-inch border around the edges and prick the base with a fork to prevent puffing. Bake for 10 minutes until lightly golden.
In a small bowl, mix the ricotta cheese with grated Parmesan, lemon zest, and half of the chopped mint. Season with salt and pepper to taste.
