Nigel Slater Bread Recipe With Yogurt

Nigel Slater Bread Recipe With Yogurt

Nigel Slater’s bread recipe with yogurt is a quick and easy bread made without yeast, relying on the acidity of yogurt and baking soda for leavening. The result is a soft, flavorful bread that’s slightly tangy and perfect for both sweet and savory toppings.

Ingredients

  • Plain flour: 250g (2 cups), sifted
  • Baking soda: 1 teaspoon, for leavening
  • Salt: ½ teaspoon, to enhance flavor
  • Plain yogurt: 200ml (¾ cup), full-fat preferred for better texture
  • Water: 2-3 tablespoons, as needed to adjust dough consistency
  • Olive oil or melted butter: 1 tablespoon, for brushing the top (optional)

Instructions

  1. Preheat the oven: Set your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Mix the dry ingredients: In a mixing bowl, sift together the plain flour, baking soda, and salt.
  3. Add the yogurt: Pour the yogurt into the dry ingredients and mix gently with a spoon.
  4. Adjust with water: Add 2-3 tablespoons of water, one at a time, until the dough comes together into a soft, slightly sticky ball.
  5. Shape the dough: Lightly flour your hands and shape the dough into a round or oval loaf. Place it on the prepared baking sheet.
  6. Score the top: Using a sharp knife, make a shallow cross on the top of the loaf to help it bake evenly.
  7. Brush with oil or butter: For a golden crust, lightly brush the top with olive oil or melted butter (optional).
  8. Bake the bread: Place the dough in the oven and bake for 25-30 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.
  9. Cool before slicing: Let the bread cool on a wire rack for at least 10 minutes before slicing.
