This meal includes a creamy and rich tomato soup made from fresh and canned tomatoes, paired with crispy cheesy toast and a light side salad. It’s designed to be a hearty, balanced meal that’s ready in just 30 minutes.

Ingredients

For the Tomato Soup:

  • Canned chopped tomatoes: 2 cans (400g each).
  • Fresh cherry tomatoes: 500g (2 cups).
  • Carrots: 2, peeled and diced.
  • Onion: 1 large, chopped.
  • Garlic: 2 cloves, minced.
  • Vegetable stock: 1 liter (4 cups).
  • Olive oil: 2 tablespoons.
  • Basil leaves: A handful, fresh.
  • Salt and black pepper: To taste.
  • Cream or Greek yogurt: For garnish (optional).

For the Cheesy Toast:

  • Bread slices: 4 thick-cut pieces.
  • Cheddar or mozzarella cheese: 100g (1 cup), grated.
  • Butter: 2 tablespoons, softened.

For the Side Salad:

  • Mixed greens: 100g (4 cups).
  • Cherry tomatoes: 100g (½ cup), halved.
  • Cucumber: 1 small, sliced.
  • Olive oil: 2 tablespoons.
  • Lemon juice: 1 tablespoon.
  • Salt and pepper: To taste.

Instructions

Step 1: Cook the soup base

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion, garlic, and carrots, and sauté for 5 minutes until softened. Add the cherry tomatoes and cook for another 5 minutes.

Step 2: Add stock and canned tomatoes

Pour in the vegetable stock and add the canned tomatoes. Season with salt and black pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.

Step 3: Blend the soup

Use an immersion blender or transfer the soup to a blender to purée until smooth. Adjust seasoning if necessary. Keep the soup warm over low heat.

Step 4: Prepare the cheesy toast

Spread butter on one side of each bread slice. Sprinkle the grated cheese on top and place under a grill or broiler for 3-5 minutes, or until the cheese is melted and golden.

Step 5: Make the side salad

In a salad bowl, toss the mixed greens, cherry tomatoes, and cucumber. Drizzle with olive oil and lemon juice, then season with salt and pepper.

Step 6: Serve

Ladle the soup into bowls, top with a swirl of cream or yogurt if desired, and garnish with fresh basil leaves. Serve with the cheesy toast and side salad on the side.
