Place the chopped dark chocolate in a heatproof bowl over a saucepan of simmering water (don’t let the bowl touch the water). Stir until melted and smooth. Remove from heat and let cool slightly.
In a clean mixing bowl, whisk the egg whites with a pinch of salt until soft peaks form. Gradually add the caster sugar, whisking until stiff and glossy.
In a separate bowl, whisk the egg yolks and vanilla extract until pale. Gently fold the lightly whipped cream into the egg yolks.
