This chocolate mousse is a simple yet decadent dessert that combines dark chocolate, cream, and a hint of sweetness to create a silky, airy texture. The recipe emphasizes speed and ease, making it a fantastic choice for a last-minute dessert.

Ingredients

  • Dark chocolate: 200g (7 oz), chopped (at least 70% cocoa solids).
  • Eggs: 4 large, separated.
  • Caster sugar: 2 tablespoons.
  • Double cream: 300ml (1¼ cups), lightly whipped.
  • Vanilla extract: 1 teaspoon.
  • Salt: A pinch.

Optional Toppings:

  • Grated chocolate.
  • Fresh berries.
  • Whipped cream.
  • Crushed nuts.

Instructions

Step 1: Melt the chocolate

Place the chopped dark chocolate in a heatproof bowl over a saucepan of simmering water (don’t let the bowl touch the water). Stir until melted and smooth. Remove from heat and let cool slightly.

Step 2: Whip the egg whites

In a clean mixing bowl, whisk the egg whites with a pinch of salt until soft peaks form. Gradually add the caster sugar, whisking until stiff and glossy.

Step 3: Mix the egg yolks and cream

In a separate bowl, whisk the egg yolks and vanilla extract until pale. Gently fold the lightly whipped cream into the egg yolks.

Step 4: Combine the ingredients

Fold the melted chocolate into the egg yolk and cream mixture until smooth. Then gently fold in the egg whites, a third at a time, being careful not to deflate the mixture.

Step 5: Serve and chill

Spoon the mousse into serving glasses or ramekins. Chill in the refrigerator for at least 20 minutes to set. For the best texture, serve within a few hours.

Step 6: Add toppings

Before serving, garnish with grated chocolate, fresh berries, or your favorite toppings.
