Jamie Oliver’s Game Casserole is a slow-cooked dish made with a mix of game meats such as venison, pheasant, rabbit, or partridge. It is braised with vegetables, red wine, and herbs, resulting in a deep, flavorful stew that’s perfect for serving with mashed potatoes or crusty bread.

For the Casserole:

  • 800g mixed game meat (venison, rabbit, pheasant, or partridge), cut into chunks
  • 2 tbsp olive oil
  • 2 onions (finely chopped)
  • 2 carrots (sliced)
  • 2 celery stalks (chopped)
  • 3 garlic cloves (minced)
  • 200g mushrooms (sliced)
  • 2 tbsp plain flour
  • 250ml red wine
  • 500ml game or beef stock
  • 2 tbsp tomato purée
  • 1 tsp Worcestershire sauce
  • 2 bay leaves
  • 1 sprig fresh thyme
  • Salt and black pepper (to taste)

For Serving:

  • Mashed potatoes
  • Crusty bread
  • Steamed greens

Instructions

Step 1: Brown the meat.
Heat olive oil in a large casserole dish over medium-high heat. Add the game meat in batches and sear until browned on all sides. Remove and set aside.

Step 2: Sauté the vegetables.
In the same dish, add onions, carrots, celery, and garlic. Sauté for 5 minutes until softened. Add the mushrooms and cook for another 2 minutes.

Step 3: Add flour and liquids.
Sprinkle in the flour and stir well to coat the vegetables. Pour in the red wine, scraping up any browned bits from the bottom. Let it simmer for 2 minutes.

Step 4: Add remaining ingredients.
Return the browned meat to the casserole. Add the stock, tomato purée, Worcestershire sauce, bay leaves, and thyme. Stir to combine.

Step 5: Simmer and cook.
Bring to a gentle boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, stirring occasionally, until the meat is tender.

Step 6: Season and serve.
Remove bay leaves and thyme sprigs. Taste and adjust seasoning with salt and black pepper. Serve hot with mashed potatoes, crusty bread, or steamed greens.
