Grilled aubergine is a versatile dish where sliced aubergines are brushed with olive oil and grilled until tender and slightly charred. Jamie Oliver’s recipe often incorporates fresh herbs and a tangy dressing to enhance the natural flavors of the aubergine.

Ingredients

  • Aubergines (eggplants): 2 medium-sized, sliced into 1cm (½ inch) thick rounds.
  • Olive oil: 3 tablespoons.
  • Garlic: 2 cloves, finely minced.
  • Lemon juice: 1 tablespoon.
  • Fresh herbs: A handful of parsley or basil, chopped.
  • Salt and black pepper: To taste.
  • Optional topping: Crumbled feta, pomegranate seeds, or tahini drizzle.

Instructions

Step 1: Prepare the aubergines

Slice the aubergines into 1cm (½ inch) thick rounds. Sprinkle them lightly with salt and let them sit for 10-15 minutes to draw out excess moisture. Pat them dry with a paper towel.

Step 2: Preheat the grill

Heat your grill pan over medium-high heat or preheat your outdoor grill.

Step 3: Brush with oil

In a small bowl, mix olive oil with minced garlic. Brush both sides of the aubergine slices with the garlic-infused olive oil.

Step 4: Grill the aubergines

Place the slices on the hot grill. Cook for 3-4 minutes on each side, or until they are tender and have visible grill marks.

Step 5: Add seasoning and herbs

Once cooked, transfer the grilled aubergines to a serving platter. Drizzle with lemon juice, sprinkle with chopped herbs, and season with salt and black pepper to taste.
