Baked Bean Pie is a creative and comforting dish that layers baked beans with mashed potatoes and savory fillings, all baked in a golden shortcrust pastry. The Hairy Bikers’ version elevates this simple dish into a flavorful and wholesome meal that’s perfect for any occasion.

For the Filling:

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 carrots, finely diced
  • 1 tsp smoked paprika
  • 2 cans (400g each) baked beans
  • 1 tbsp Worcestershire sauce
  • Salt and black pepper, to taste

For the Mashed Potato Layer:

  • 500g potatoes, peeled and chopped
  • 50g butter
  • 100ml milk
  • Salt and black pepper, to taste

For the Pastry:

  • 300g plain flour
  • 150g unsalted butter, cold and diced
  • 1 egg yolk
  • 34 tbsp cold water

Instructions

  • Make the Pastry: In a mixing bowl, combine the flour and diced butter. Rub together with your fingertips until the mixture resembles breadcrumbs. Add the egg yolk and cold water, a tablespoon at a time, until the dough comes together. Wrap in cling film and chill for 30 minutes.
  • Prepare the Mashed Potatoes: Boil the potatoes in salted water until tender. Drain and mash with butter, milk, salt, and pepper until smooth. Set aside.
  • Cook the Filling: Heat the olive oil in a frying pan over medium heat. Sauté the chopped onion, garlic, and diced carrots for 5-7 minutes until softened. Stir in the smoked paprika and cook for 1 minute. Add the baked beans, Worcestershire sauce, salt, and pepper. Simmer for 5 minutes, then set aside to cool.
  • Preheat the Oven: Preheat your oven to 200°C (180°C fan) or 400°F.
  • Roll Out the Pastry: On a floured surface, roll out the pastry dough to fit your pie dish. Line the dish with the pastry, trimming the edges. Reserve any leftover pastry for decoration if desired.
  • Assemble the Pie: Spoon the baked bean filling into the pastry-lined dish. Spread the mashed potatoes over the filling, smoothing the top with a fork for texture.
  • Bake the Pie: Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and crisp.
  • Serve and Enjoy: Allow the pie to cool slightly before serving. Slice and enjoy with a fresh salad or steamed vegetables.
