Hairy Bikers Focaccia

Focaccia is a traditional Italian flatbread known for its fluffy texture and olive oil-infused crust. Topped with herbs, salt, and sometimes additional ingredients like garlic or tomatoes, it’s versatile and packed with flavor. The Hairy Bikers’ recipe ensures a light, tender focaccia that’s perfect every time.

  • 500g strong white bread flour
  • 10g salt
  • 7g fast-action yeast
  • 350ml warm water
  • 4 tbsp olive oil, plus extra for drizzling
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp flaky sea salt, for topping

Instructions

  1. Mix the Dough: In a large mixing bowl, combine the flour, salt, and yeast. Gradually add the warm water and 2 tablespoons of olive oil. Mix with a wooden spoon or in a stand mixer fitted with a dough hook until the dough comes together.
  2. Knead the Dough: Knead the dough for 10 minutes on a floured surface or 5 minutes in the stand mixer until smooth and elastic.
  3. First Rise: Place the dough in a lightly oiled bowl, cover it with a tea towel, and let it rise in a warm place for 1 hour, or until it doubles in size.
  4. Prepare the Baking Tray: Drizzle 1 tablespoon of olive oil onto a large baking tray. Punch down the dough, then transfer it to the tray. Stretch and press the dough to fit the tray, creating an even thickness.
  5. Add Dimples and Toppings: Using your fingers, press deep dimples into the dough. Drizzle with the remaining olive oil, sprinkle with chopped rosemary, and scatter the flaky sea salt on top.
  6. Second Rise: Cover the tray with a tea towel and let the dough rise again for 30 minutes.
  7. Preheat the Oven: Preheat your oven to 220°C (200°C fan) or 425°F.
  8. Bake the Focaccia: Bake the focaccia in the preheated oven for 20-25 minutes or until golden brown and cooked through.
  9. Cool and Serve: Remove from the oven, drizzle with a little extra olive oil if desired, and let cool slightly before slicing. Serve warm or at room temperature.
