Hairy Bikers Jerk Chicken

Jerk chicken is a traditional Caribbean dish marinated in a blend of spices, herbs, and Scotch bonnet peppers. The Hairy Bikers’ take on this classic recipe brings together the authentic flavors of the Caribbean while keeping it easy to prepare at home.

  • 6 chicken thighs and drumsticks, bone-in, skin-on
  • 2 tbsp vegetable oil
  • Juice of 1 lime

For the Marinade:

  • 2 Scotch bonnet peppers, finely chopped (adjust for heat)
  • 4 garlic cloves, minced
  • 1 small onion, finely chopped
  • 2 tsp ground allspice
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 2 tsp dried thyme
  • 1 tsp smoked paprika
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • Juice of 1 orange
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Marinade: In a blender or food processor, combine the Scotch bonnet peppers, garlic, onion, allspice, cinnamon, nutmeg, thyme, smoked paprika, soy sauce, brown sugar, orange juice, salt, and black pepper. Blend until smooth.
  2. Marinate the Chicken: Place the chicken pieces in a large mixing bowl or resealable bag. Pour the marinade over the chicken, ensuring all pieces are well coated. Cover and refrigerate for at least 2 hours, or ideally overnight for maximum flavor.
  3. Preheat the Grill or Oven: If grilling, preheat the grill to medium heat. If using the oven, preheat to 200°C (400°F).
  4. Cook the Chicken: Remove the chicken from the marinade, reserving the marinade for basting. Grill the chicken for 25-30 minutes, turning occasionally and basting with the reserved marinade, until charred and cooked through. For oven cooking, place the chicken on a baking tray and roast for 40-45 minutes, basting halfway through. Ensure the chicken reaches an internal temperature of 75°C (165°F).
  5. Add the Final Touch: Squeeze fresh lime juice over the chicken just before serving for a burst of freshness.
  6. Serve and Enjoy: Serve hot with your favorite sides like rice and peas, coleslaw, or grilled vegetables.
