Hairy Bikers’ Slow Cooker Lamb Curry is a slow-cooked dish that combines tender lamb with a blend of Indian-inspired spices, tomatoes, and creamy yogurt. The slow cooking process ensures the lamb becomes meltingly tender and the flavors develop beautifully over time.

Ingredients

  • Lamb shoulder or leg: 800g, cut into chunks
  • Onion: 2 large, finely chopped
  • Garlic cloves: 3, minced
  • Fresh ginger: 1-inch piece, grated
  • Tomatoes: 400g can, chopped
  • Plain yogurt: 150ml
  • Vegetable oil: 2 tablespoons
  • Curry powder: 2 tablespoons
  • Ground cumin: 1 teaspoon
  • Ground coriander: 1 teaspoon
  • Turmeric: ½ teaspoon
  • Chili powder: ½ teaspoon (adjust to taste)
  • Cinnamon stick: 1
  • Bay leaf: 1
  • Salt and pepper: To taste
  • Fresh coriander: Chopped, for garnish

Instructions

Prepare the Lamb and Aromatics:

  • Brown the lamb: Heat the vegetable oil in a frying pan over medium heat. Brown the lamb chunks in batches, ensuring each piece is seared evenly. Transfer to the slow cooker.
  • Sauté the onions: In the same pan, add the chopped onions and cook until softened and golden. Add the garlic and ginger, cooking for another 2 minutes.

Combine the Spices and Sauce:

  • Toast the spices: Stir in the curry powder, cumin, coriander, turmeric, and chili powder. Cook for 1 minute to release their aromas.
  • Add the tomatoes and yogurt: Mix in the chopped tomatoes and yogurt, stirring to combine. Bring the mixture to a simmer.

Assemble in the Slow Cooker:

  • Transfer the sauce: Pour the spiced tomato mixture over the lamb in the slow cooker.
  • Add the whole spices: Place the cinnamon stick and bay leaf into the slow cooker. Season with salt and pepper.

Cook the Curry:

  • Set the slow cooker: Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the lamb is tender and the flavors are well-developed.

Finish and Serve:

  • Adjust seasoning: Taste the curry and adjust the salt and pepper if needed.
  • Garnish: Sprinkle with fresh coriander before serving.
