Hairy Bikers Tiramisu

Tiramisu is a classic Italian dessert made with layers of coffee-soaked ladyfingers (savoiardi), creamy mascarpone filling, and a dusting of cocoa powder. The Hairy Bikers’ version puts a fun twist on this beloved dessert while maintaining its authentic charm.

  • 200g savoiardi biscuits (ladyfingers)
  • 300ml strong coffee, cooled
  • 50ml coffee liqueur (optional)
  • 3 large eggs, separated
  • 100g caster sugar
  • 500g mascarpone cheese
  • 1 tsp vanilla extract
  • Cocoa powder, for dusting

Instructions

  1. Prepare the Coffee Mixture: In a shallow dish, mix the cooled coffee and coffee liqueur (if using). Set aside.
  2. Whisk the Egg Yolks: In a mixing bowl, whisk the egg yolks and caster sugar until pale and creamy. This should take about 2-3 minutes with an electric whisk.
  3. Add the Mascarpone: Fold the mascarpone cheese and vanilla extract into the egg yolk mixture until smooth and creamy.
  4. Whisk the Egg Whites: In a separate clean bowl, whisk the egg whites until stiff peaks form. Gently fold the egg whites into the mascarpone mixture to create a light and fluffy filling.
  5. Layer the Tiramisu: Dip each savoiardi biscuit into the coffee mixture for a few seconds, ensuring they are soaked but not too soft. Arrange a layer of the soaked biscuits at the bottom of your dish. Spread half of the mascarpone mixture over the biscuits.
  6. Add a Second Layer: Repeat the process with another layer of coffee-soaked biscuits and top with the remaining mascarpone mixture.
  7. Chill the Dessert: Cover the dish with cling film and refrigerate for at least 4 hours, or overnight, to allow the flavors to develop.
  8. Dust with Cocoa: Before serving, use a fine sieve to dust the top of the tiramisu with cocoa powder for a finishing touch.
