  • 300g white cabbage, shredded
  • 1 large carrot, grated
  • 4 spring onions, finely sliced
  • 4 tbsp mayonnaise

Instructions

  1. Prepare the Vegetables: In a large mixing bowl, combine the shredded white cabbage, grated carrot, and finely sliced spring onions. Toss well to mix.
  2. Chop the Kimchi: Finely chop the kimchi to ensure it blends evenly into the coleslaw. Add it to the bowl with the vegetables.
  3. Add the Mayonnaise: Stir in the mayonnaise, mixing thoroughly to coat the vegetables and kimchi. Adjust the amount of mayo based on your preferred creaminess.
  4. Season and Taste: Taste the coleslaw and adjust the seasoning if needed. Depending on your kimchi, you may not need extra salt or spice.
  5. Garnish and Serve: Transfer the coleslaw to a serving bowl. Sprinkle with toasted sesame seeds and fresh coriander leaves for extra flavor and presentation.
