Mary Berry Mac and Cheese

Mary Berry’s Mac and Cheese is a creamy and cheesy pasta dish made with a smooth béchamel sauce, mature cheddar, and a golden-baked topping. This version is rich in flavor and has a perfect balance of creaminess and crunch from the baked cheese topping.

For the Mac and Cheese:

  • 250g macaroni (or any short pasta)
  • 50g unsalted butter
  • 50g plain flour
  • 600ml whole milk
  • 1 tsp Dijon mustard
  • 200g mature cheddar cheese (grated)
  • 50g Parmesan cheese (grated)
  • Salt and black pepper (to taste)

For the Topping (Optional):

 

  • 50g cheddar cheese (grated)
  • 50g panko breadcrumbs
  • 1 tbsp butter (melted)

Instructions

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook the macaroni according to package instructions until al dente.
  • Drain and set aside.

Step 2: Make the Cheese Sauce

  • In a saucepan over medium heat, melt the butter, then stir in the flour to create a roux.
  • Cook for 1 minute, stirring continuously.
  • Gradually whisk in the milk, ensuring a smooth mixture.
  • Stir in Dijon mustard and continue cooking for 2-3 minutes until thickened.
  • Lower the heat and add the cheddar and Parmesan cheese, stirring until fully melted.
  • Season with salt and black pepper to taste.

Step 3: Combine Pasta and Sauce

  • Add the cooked macaroni to the cheese sauce and stir until fully coated.

Step 4: Prepare the Topping (Optional)

  • If baking, preheat the oven to 200°C (180°C fan) or 400°F.
  • Transfer the mac and cheese to a baking dish.
  • Mix panko breadcrumbs, melted butter, and extra cheese, then sprinkle over the top.

Step 5: Bake Until Golden (Optional)

  • Bake for 10-15 minutes until the top is golden and crispy.

Step 6: Serve and Enjoy

  • Serve immediately while hot and creamy.
