Meringues are sweet, baked confections made from whipped egg whites and sugar. Mary Berry’s recipe ensures perfectly fluffy, glossy meringues that are easy to make and suitable for a variety of desserts.

  • 175g caster sugar
  • 1/2 tsp cream of tartar (optional, for stability)

Instructions

  1. Preheat the Oven: Preheat your oven to 120°C (100°C fan) or 250°F. Line a baking tray with parchment paper.
  2. Whisk the Egg Whites: In a clean, grease-free bowl, whisk the egg whites with an electric mixer on medium speed until they form stiff peaks.
  3. Add the Sugar Gradually: Increase the speed to high and add the caster sugar 1 tablespoon at a time, whisking well after each addition. Continue until all the sugar is incorporated and the mixture is glossy and stiff. Add the cream of tartar at this stage if using.
  4. Shape the Meringues: Use a spoon to dollop the meringue mixture onto the prepared baking tray, or pipe it using a piping bag for a more uniform shape. Leave space between each meringue for expansion.
  5. Bake the Meringues: Place the tray in the preheated oven and bake for 1 hour. After baking, turn off the oven and leave the meringues inside to cool completely. This helps them dry out fully and achieve the perfect crisp texture.
  6. Serve and Enjoy: Once cooled, serve the meringues on their own, with whipped cream and berries, or as part of your favorite dessert.
