Nigel Slater’s Lazy Loaf is a no-knead bread recipe made with wholemeal flour, oats, and buttermilk for a dense, flavorful loaf. The simplicity of the method and the hearty texture make it an ideal choice for everyday bread.

Ingredients

  • Wholemeal flour: 250g (2 cups), for a hearty base
  • Plain flour: 100g (¾ cup), to balance the texture
  • Porridge oats: 75g (¾ cup), plus extra for topping
  • Baking soda: 1 teaspoon, for leavening
  • Salt: 1 teaspoon, to enhance flavor
  • Buttermilk: 400ml (1¾ cups), for moisture and a tangy flavor
  • Honey: 1 tablespoon, for a hint of sweetness

Instructions

  1. Preheat the oven: Set your oven to 200°C (400°F) and line a loaf tin with parchment paper.
  2. Mix the dry ingredients: In a large mixing bowl, combine wholemeal flour, plain flour, oats, baking soda, and salt.
  3. Add the wet ingredients: Stir in the buttermilk and honey, mixing gently until you have a sticky dough. Avoid overmixing.
  4. Transfer to the tin: Spoon the dough into the prepared loaf tin and smooth the top with a spatula. Sprinkle with extra oats for a rustic finish.
  5. Bake the loaf: Place the tin in the oven and bake for 40-45 minutes, or until the top is golden and the loaf sounds hollow when tapped.
  6. Cool before slicing: Allow the loaf to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before slicing.
