Raspberry coulis is a smooth, sweet, and tangy sauce made by blending and straining raspberries. It’s typically sweetened with sugar and enhanced with a touch of lemon juice for brightness, creating a perfect complement to cakes, ice creams, and pastries.

Ingredients

  • Raspberries: 250g (fresh or frozen).
  • Sugar: 2-3 tablespoons (adjust to taste).
  • Lemon juice: 1 tablespoon, freshly squeezed.
  • Water: 2 tablespoons (optional, for adjusting consistency).

Instructions

Step 1: Prepare the raspberries

If using fresh raspberries, rinse them gently and pat dry. If using frozen raspberries, thaw them slightly.

Step 2: Cook the raspberries

In a small saucepan, combine the raspberries, sugar, and lemon juice. Cook over medium heat for 3-5 minutes, stirring occasionally, until the raspberries break down and release their juices.

Step 3: Blend the mixture

Remove the saucepan from the heat and let it cool slightly. Transfer the raspberry mixture to a blender or food processor and blend until smooth.

Step 4: Strain the coulis

Pour the blended mixture through a fine mesh sieve into a bowl. Use a spatula or spoon to press the liquid through, leaving the seeds behind.

Step 5: Adjust the consistency

If the coulis is too thick, add a tablespoon or two of water and stir until it reaches your desired consistency.

Step 6: Serve or store

Use the raspberry coulis immediately or transfer it to an airtight container and refrigerate for up to 5 days.
