Ingredients

  • Pasta: 300g (spaghetti, linguine, or your choice).
  • Seafood mix: 400g (mussels, prawns, squid, and scallops).
  • Cherry tomatoes: 250g, halved.
  • Garlic: 3 cloves, finely chopped.
  • Olive oil: 3 tablespoons.
  • White wine: 100ml.
  • Chili flakes: ½ teaspoon (optional).
  • Fresh parsley: A handful, finely chopped.
  • Lemon: 1, zest and juice.
  • Salt and pepper: To taste.

Instructions

Step 1: Cook the pasta
Boil water in a large pot, add a pinch of salt, and cook the pasta according to package instructions. Reserve ½ cup of pasta water, then drain and set aside.

Step 2: Prepare the seafood
Heat olive oil in a large frying pan over medium heat. Add chopped garlic and chili flakes, cooking until fragrant. Add the seafood mix and cook for 3-4 minutes until just tender.

Step 3: Create the sauce
Add cherry tomatoes and white wine to the pan. Let it simmer for 5 minutes, allowing the tomatoes to soften and the wine to reduce slightly.

Step 4: Combine pasta with sauce
Add the cooked pasta to the pan with the seafood sauce. Toss well to coat, adding a splash of reserved pasta water if needed.

Step 5: Add final touches
Season with salt, pepper, lemon zest, and juice. Garnish with fresh parsley and serve immediately.
