Shepherd’s Pie is a traditional British dish made with minced lamb cooked in a savory sauce with vegetables, topped with creamy mashed potatoes and baked until crispy and golden. Jamie Oliver’s version includes fresh herbs, Worcestershire sauce, and extra vegetables for depth of flavor.

For the Lamb Filling:

  • 500g (1 lb) minced lamb
  • 1 tbsp olive oil
  • 1 onion (finely chopped)
  • 2 carrots (finely diced)
  • 2 celery stalks (finely diced)
  • 2 garlic cloves (minced)
  • 1 tbsp tomato purée
  • 1 tbsp Worcestershire sauce
  • 250ml (1 cup) beef or lamb stock
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp fresh rosemary (chopped)
  • 1 bay leaf
  • Salt and black pepper (to taste)
  • 1 cup frozen peas (optional)

For the Mashed Potato Topping:

  • 1kg (2.2 lbs) potatoes (peeled and chopped)
  • 50g (¼ cup) butter
  • 100ml (½ cup) milk
  • 50g (½ cup) cheddar cheese (grated, optional)
  • Salt and black pepper (to taste)

Instructions

Step 1: Cook the Lamb Filling

  • Heat olive oil in a large pan over medium heat.
  • Add onion, carrots, celery, and garlic, cooking for 5-7 minutes until softened.
  • Add the minced lamb and cook until browned, breaking it up with a spoon.
  • Stir in tomato purée, Worcestershire sauce, thyme, rosemary, and bay leaf.
  • Pour in the stock, bring to a simmer, and cook for 20 minutes, stirring occasionally.
  • Add frozen peas in the last 5 minutes, then season with salt and black pepper.

Step 2: Make the Mashed Potatoes

  • Boil chopped potatoes in salted water for 15 minutes or until soft.
  • Drain and mash with butter, milk, salt, and black pepper until smooth.
  • Stir in grated cheese if using, for extra flavor.

Step 3: Assemble the Shepherd’s Pie

  • Preheat oven to 200°C (180°C fan) or 400°F.
  • Spoon the lamb mixture into a baking dish.
  • Spread the mashed potatoes evenly over the top, using a fork to create texture.

Step 4: Bake Until Golden

  • Bake for 20-25 minutes until the top is golden and slightly crispy.
  • Let it rest for 5 minutes before serving.
