Jamie Oliver Spicy Tomato Pasta is a simple yet vibrant dish that combines al dente pasta with a rich and spicy tomato sauce. Infused with garlic, chili, and fresh herbs, it’s a comforting meal with a zesty twist.

Ingredients

  • Pasta: 300g (spaghetti, penne, or your favorite shape).
  • Cherry tomatoes: 250g, halved.
  • Garlic: 3 cloves, finely chopped.
  • Red chili: 1-2, finely chopped (adjust to taste).
  • Olive oil: 3 tablespoons.
  • Tomato paste: 2 tablespoons.
  • Fresh basil: A handful, roughly chopped.
  • Parmesan cheese: 50g, grated (optional).
  • Salt and pepper: To taste.

Instructions

Step 1: Cook the pasta
Boil water in a large pot, add a pinch of salt, and cook the pasta according to package instructions. Reserve ½ cup of pasta water before draining.

Step 2: Prepare the spicy base
Heat olive oil in a frying pan over medium heat. Add the chopped garlic and chili, sautéing for 1-2 minutes until fragrant.

Step 3: Cook the tomatoes
Add the halved cherry tomatoes and tomato paste to the pan. Cook for 5-7 minutes, stirring occasionally, until the tomatoes break down into a sauce.

Step 4: Combine pasta and sauce
Add the cooked pasta to the pan with the spicy tomato sauce. Toss well to coat, adding reserved pasta water to loosen the sauce if needed.

Step 5: Season and garnish
Season with salt and pepper, then stir in fresh basil. Serve hot with grated parmesan if desired.
