Ingredients

Scale

For the Sweet Potato Base:

  • 4 large sweet potatoes (about 1.5kg), peeled and cubed
  • 50g unsalted butter
  • 100ml whole milk
  • 50g brown sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 1 egg, beaten (for structure)

For the Crunchy Pecan Topping (Option 1):

  • 75g pecans, chopped
  • 50g brown sugar
  • 2 tbsp all-purpose flour
  • 30g unsalted butter, melted

For the Marshmallow Topping (Option 2):

  • 100g mini marshmallows

Instructions

Step 1: Cook the Sweet Potatoes

  1. Boil the sweet potatoes – Place the peeled and cubed sweet potatoes in a large pot of salted water. Bring to a boil and cook for about 15 minutes or until tender. Drain well.
  2. Mash until smooth – Use a potato masher or blend until creamy.

Step 2: Prepare the Sweet Potato Mixture

  1. Mix in the ingredients – Add butter, milk, brown sugar, cinnamon, nutmeg, salt, and vanilla extract to the mashed sweet potatoes. Stir well.
  2. Add the beaten egg – Mix thoroughly to help set the casserole when baked.

Step 3: Prepare the Topping

For the Crunchy Pecan Topping:

  1. In a small bowl, mix the chopped pecans, brown sugar, flour, and melted butter until combined.

For the Marshmallow Topping:

  1. Set aside mini marshmallows to add later.

Step 4: Assemble and Bake

  1. Preheat the oven – Set to 180°C (350°F).
  2. Spread the sweet potato mixture – Pour into a greased baking dish and smooth the top.
  3. Add the topping – If using the pecan topping, sprinkle it evenly over the casserole. If using marshmallows, add them in the last 10 minutes of baking.
  4. Bake until golden – Bake for 25-30 minutes, or until the top is golden brown and the casserole is set.
  5. Cool slightly and serve – Let it rest for a few minutes before serving.
