Tuna quiche is a savory tart made with a crisp pastry base and a creamy, custard-like filling. The filling is infused with tuna, cheese, and aromatic herbs, creating a satisfying and flavorful dish that can be enjoyed hot or cold.

Ingredients

  • Shortcrust pastry: 1 pre-made sheet (or homemade).
  • Canned tuna: 2 tins (about 150g each), drained.
  • Eggs: 4 large.
  • Heavy cream: 200ml.
  • Cheddar cheese: 100g, grated.
  • Spring onions: 2, finely sliced.
  • Fresh parsley: A handful, chopped.
  • Salt and pepper: To taste.

Instructions

Step 1: Prepare the crust

Preheat your oven to 180°C (350°F). Roll out the shortcrust pastry and press it into the quiche or tart pan. Trim the edges and prick the base with a fork. Line with baking paper and fill with baking beans or rice to blind bake. Bake for 10-12 minutes, then remove the paper and beans and bake for an additional 5 minutes until lightly golden.

Step 2: Make the filling

In a mixing bowl, whisk together the eggs and heavy cream until smooth. Stir in the drained tuna, grated cheddar cheese, sliced spring onions, and chopped parsley. Season with salt and pepper to taste.

Step 3: Assemble the quiche

Pour the filling mixture into the pre-baked pastry crust, spreading it out evenly. Sprinkle a little extra cheese on top if desired.

Step 4: Bake the quiche

Place the quiche in the preheated oven and bake for 25-30 minutes, or until the filling is set and the top is golden brown.

Step 5: Cool and serve

Remove the quiche from the oven and let it cool for 10 minutes before slicing. Serve warm or at room temperature.
